(2) Operation points

The choice of raw materials: choose thin skin, thick and dense flesh, high sugar, nuclear small variety. Before the jujube is dried, it usually only needs to be selected and no other treatment is required.

Boiled: jujube first blanched in boiling water for 5 ~ 10min, immediately cooled and spread out after drying, can improve the quality of dried dates.

Natural drying: drying date is relatively simple, generally choose empty floor, floor covered with mat foil, etc., the date will be spread directly on the seat. In some areas, the sandy land in Gaoshuang has become sunny, and jujube is scattered on the sand. Every day at sunset, the jujube is gathered into piles, covering the lushui seats, spread out after sunrise the next day, and turned several times before and after noon. It's hot and sunny for about 1 week.

Artificial drying: loading capacity of 12-15kg/m-2; initial temperature of 55°C, final temperature of 65-75°C; drying time of 24h.

Packing: pick out the broken jujube, green jujube, worm date, and carry out packaging. Dry and appropriate dry dates, dark red skin, golden yellow meat, flexible, moisture content of 25% to 28%, drying rate of 3:1 to 4:1.
